		<description>Good question! Extra virgin olive oil is ok for making sauces, salad dressings, and vinaigrettes. It has a low smoke point, meaning the oil decomposes at lower temperatures than say, regular olive oil, canola oil, or vegetable oil. So you lose flavor and nutritional value. In addition, the oil is no longer a healthy fat - it becomes like a trans fat which is very unhealthy. Olive oil is more refined than extra-virgin olive oil and has a higher smoke point.</description>

		<description>I think chickpeas are my favorite bean too. And roasting them is one of my favorite treatments. I make mine really spicy. But I haven&#039;t figured out how to make them stay crunchy if I don&#039;t eat them all right away, they always get a bit soggy in storage. Any tips?
