The Veganized Double Down

This is hilarious. Or sad. I’m not sure which.

Remember on April 12 when KFC introduced their artery-clogging, blood pressure-blasting, heart-stopping sandwich called the “Double Down?”

“The one-of-a-kind Double Down features two thick and juicy boneless white meat chicken filets (Original Recipe(R) or Grilled), two pieces of bacon, two melted slices of Monterey Jack and pepper jack cheese and Colonel’s Sauce. And no bun, of course. “

UGH!

Well of course no one wants to be left out of the fun! So Foodswings of Brooklyn has responded with the…

wait for it…

the “Handwich.”

“The Handwich is two faux chicken patties breaded with cornflakes and special seasoning, fried with daiya and tofutti cheese, faux bacon, lettuce, tomato, red onion and a sweet mustard dijonaise (we add veggies because they’re manly too!)”

Thus proving that indeed you CAN be vegan and eat unhealthy junk food LOL!

In other breaking news, KFC announced today that later this month they will sell their 10 MILLIONTH Double Down sandwich.

10,000,000!!!

And so KFC is going to keep the once “limited time only” Double Down on it’s menu forever.

I swear I must really belong in some alternate universe. :0

Cheese Free

veganmofo

I’d go vegan but I could never give up CHEESE!

Not only have I heard this a million times, I’ve said it myself when I was a vegetarian. I couldn’t imagine giving up cheese. I mean, how would I eat pizza? Or nachos?  Or grilled cheese sandwiches? Going vegan and giving up cheese just seemed like such deprivation. And here I am just a few months later and I don’t crave cheese AT ALL. Here’s why:

  • Daiya Cheese is an amazing non-dairy cheese that is creamy and smooth, and melts perfectly. Unlike the soy cheeses that contain casein, a milk protein, Daiya is 100% vegan.
  • Nutritional yeast is an inactive yeast that has a nutty, cheesy flavor. I use nutritional yeast as a flavoring in scrambled tofu, a topping for popcorn, the based for “cheese” sauces, and a creamy, cheesey filling for a vegan grilled “cheese” sandwich. Not all nutritional yeasts taste the same – my current favorite brand is Red Star, which as an added benefit is also a good source of vitamin b12.
  • Tofutti Better Than Cream Cheese is an AMAZING cream cheese replacement. I’ve used Tofutti cream cheese in several baking recipes, including a “Fruit Pizza” that was a huge hit at a party I recently attended. You can find Tofutti Better Than Cream Cheese at Whole Foods and I recently saw it at Giant too!
  • Parma! Vegan Parmesan completely satisfies any craving I have to sprinkle something on pasta. It’s made from walnuts, Red Star, and sea salt. It’s more of a seasoning than a cheese (i.e. it doesn’t melt), but I think even non-vegans would really like it.
  • Tofu can be a great substitute for recipes that include cottage or ricotta cheese. You cannot even tell that my vegan lasagna uses tofu and not ricotta.
  • Finally, many foods don’t even need cheese! I’ve discovered that many of my previously favorite cheese conduits are perfectly fine on their own. Cheese-free pizzas, made with a really good tomato sauce and lots of veggies is delicious (and of course I can use Daiya if I really want “cheese”). I don’t miss cheese on my salads – I instead toss in some walnuts and / or avocado instead. And other foods like burritos, soups, and pastas are fine without it – I’ve just gotten used to not including cheese on them.

I hope this is helpful if you are like me and just can’t imagine a cheese-less life. It’s easier than you think!

What is your favorite recipe for replacing or omitting cheese?

Most and Least Contaminated Fruits and Vegetables

From the Environmental Working Group:

The Shopper’s Guide to Pesticides ranks pesticide contamination for 47 popular fruits and vegetables based on an analysis of 87,000 tests for pesticides on these foods, conducted from 2000 to 2007 by the U.S. Department of Agriculture and the Food and Drug Administration. Nearly all the studies used to create the list test produce after it has been rinsed or peeled.

The pesticides used in commercial farming are full of toxins that attack your nervous system, reproductive system and immune system, damage your brain and cause cancer. Developing fetuses and young children are especially at risk for being harmed by these chemicals.

THE MOST CONTAMINATED FRUITS & VEGETABLES:

  1. PEACHES: Over 94% tested positive for traces of 45 different pesticides.
  2. CELERY 94% tested positive for 29 different pesticides.

My Pet McDonald's Hamburger

I saw a video on The Onion’s website today about how Taco Bell is “going green.”

I know, it sounds like a joke.

And it is :)

Nevertheless, when I saw the video I was inspired to check up on my Pet McDonald’s Hamburger.

I know this sounds weird to some that a nice veggie girl like me has a Pet McDonald’s Hamburger. Here’s the story:

Back in 2004 a nutritionist friend of mine told me that as an experiment she had purchased a plain McDonald’s hamburger and purposely did not eat it. She let it sit out for two weeks to see what would happen. And to her amazement, nothing happened. She took a photo of the hamburger and then threw it away. I thought that was pretty amazing and I wanted to try it myself. So on Friday August 13, 2004 I purchased a McDonald’s hamburger at a McDonald’s in McLean, VA. And guess what…I still have it!

DSC_0221

I’ve never put it in the freezer or the fridge.
I didn’t spray it with any kind of preservative.
I didn’t store it in any special way.
For nearly six years I have just left it in the bag it came in, along with the receipt.

It’s hard to see but it does still faintly say Aug 13 04. Seems the receipt is fading before the hamburger does LOL!

In the time I’ve had it, the hamburger never ever smelled bad.
It never grew any mold.
It never attracted any bugs!
After the initial McDonald’s hamburger smell wore off, my dogs were never interested in it.

All it did was shrink a little bit (dehydrated, I guess) and got a little crusty. Now when I pick it up a little dust shakes off it.

My six year old hamburger looks almost exactly as it did when I bought it! ( Kind of like Susan Lucci :) )susan lucci

What do you think of that?

BTW, here’s the Taco Bell video that caught my eye today:

Cold Remedies

UGH I’ve been sick for two days now. BOO!tissues

This cold just came out of no where. On Sunday I was suddenly really thirsty. Couldn’t make it go away no matter how much water I drank. I think when that happens you know you’re done for.

D. has been super awesome. He brought me vegetarian pho from Saigon Cafe last night and some chips today to snack on. He’s been checking in on me but not too much cuz he knows I like to be alone when I sick!

So this is what I’ve been doing to take care of myself:

  • Stay in bed – do NOT do anything. This includes no working out, no teaching yoga, no housework (schucks), no cooking, no walking the dogs, nothing, nada. I started this the moment I realized I was getting a cold.
  • Drink lots of liquids - water, peach iced tea, Gypsy Cold Care tea, and Ginger Honey Crystals. I really love the Ginger Honey Crystals but at 70 calories per cup I limit it to one or two cups a day.
  • Sleep as much as possible. My sleep patterns are a little off so I’m just taking sleep when I can get it.
  • Eat lots of fruits and veggies. I made a huge fruit salad (blueberries, raspberries, strawberries, mango, kiwi, almonds, coconut) and I’ve been eating the Bean and Veggie salad I made on Sunday. I’ve also been munching on grapes – little compact thirst quenchers!

Do you have any super cold remedies that I should try?
