The 9 day challenge is going ok for me. I have yet to make it to 9, i have made it to 8! Today is day 5 for me. I am finding myself picking more fruits/veggies to snack on and always thinking of ways to incorporate throughout the day. I am already noticing i have a bit more energy and i am less bloated! I haven&#039;t weighed myself yet, but even after just a few days i feel a little lighter!

		<description>Ok... I&#039;m new to this whole blog thing, so here it goes.

I LOVE to eat and I already have a diet of mostly fruits and vegetables. So, getting to the nine servings a day hasn&#039;t been a big problem for me. As I&#039;ve recently started to explore my diet and what a healthy diet means to me, I&#039;m beginning to notice that I am really interested in 3 things: nutritional value, food combining and variety.

Discovering the nutritional value in unprocessed, organic, whole foods is fairly simple. I&#039;m finding the harder part is discovering what foods should and shouldn&#039;t be paired with others in order to achieve optimal nutrient absorption. Only recently did I discover that some food enzymes can cancel out our bodies ability to absorb the nutrients we are trying to provide ourselves in our diet.

Example:

Oxalic acid, if consumed excessively, can inhibit calcium and magnesium absorption. Common foods containing high amounts of oxalic acid: Amaranth, Beet Greens, Chives, Parsley, Rhubarb, Spinach. Spinach, a calcium-rich food, is an exception. The oxalic acid it contains binds to most of its readily available calcium (up to 95%) preventing absorption of the calcium found in the spinach itself, but not from the other calcium-rich foods in your diet.

The next step on my journey is to discover simple ways in which I can create a variety of different meal options with the foods I am finding are beneficial for me. However, that conversation will probably be best saved for another day... :)

The 9-A-Day challenge has been good for me because it has reminded me that we should always be willing to re-evaluate what we are physically and spiritually consuming. I think Ghandi said it best, &quot;Constant development is the law of life, and a man who always tries to maintain his dogmas in order to appear consistent drives himself into a false position.&quot; This to me seems to be the healthiest diet... One that is willing to evolve as my knowledge and self-awareness continue to grow.
